On deliverables to clients such as topographical maps, I assume it is a best practice to disclaim that the drawings were not produced by a licensed surveyor. How are you guys wording this disclaimer? Are you guaranteeing any particular accuracy (or the lack thereof)?

As long as there is a thorough quality assurance process in place from capture to delivery, I don't think you require that kind of disclaimer.

Touche. Then how about a limitation of liability equal to the scanning fees?

Regarding accuracy, I'm thinking "Calibration certificates for the scanner used and accuracy reports for the point cloud registration are available upon request" to keep it vague. I work for a general contractor and we've used scanning as only an in-house tool up to this point. I'm a little paranoid about preparing point clouds and drawings for clients when I don't know what their end use for the data will be.

You should really get a user requirement otherwise you could trip up. The easiest caviar would be scale. If you quote your data set to a scale of 1:50 for example then the client should be confident that they could produce a plan, elevation or section to that quoted value.
