hello can anyone tell me how i will create a high-quality orthophoto for documentation for heritage like the above?
I have used cyclone with no good results ..
Maybe a dsl camera and then make it orthophoto ? I would like to know the workflow..

Cyclone orthos are not up to much for heritage.
If your after really good ortho photos its a photogrammetry job with a medium format camera.

I have sony a5000 with fixed lenses 16mm and fish eye, we also use pix4d program but I am still stuck with no good results..

Get a proper prime lens, not a fish eye or wide angle.
If its the Sony you like i would be investing in the Sony A7R IV with maybe a 24mm, 50mm and one other lens to help fill in the gaps.
But you cannot beat medium format for heritage photography.

I use the ortho photo app in Faro Scene. Currently using a S350 but I did get good data using the X330. For the areas out of the line of site I use a DJI Inspire 2 with the Zenmuse 7 camera and a 50mm lens. The drone data is processed in Agisoft Photoscan and scaled using 2 control points captured with the laser scanner. I create a project point cloud in Scene and export in E57. The Agisoft dense point cloud is exported in E57. The two point clouds are combined in CloudCompare. The combined point cloud can be imported into Scene to create the ortho photos. There may also be a function within Cloudcompare for the ortho photos. In areas where you would like a higher resolution I use Nikon D750 with a 35mm prime lens. This can be processed with control points in the same manner as the UAV data or used to create a high quality mesh for evaluation and replication.
